Jalapeño Popper Chicken in Air-Fryer

 

If you are a fan of Jalapeno Poppers Wrapped in Bacon, you will definitely love this fast and easy recipe for Jalapeño Popper Chicken in Air-Fryer. Quite frankly, my air-fryer has been getting a work out as of late. Air-Fryer Lemon Pepper Shrimp and Provencal Salmon Fillets in Air Fryer are two of the latest recipes we’ve made in the air-fryer. Now that it’s just my hubby and I, the air-fryer has become my new best friend in the kitchen. When my hubby brought  home a big box and said “I have a surprise for you!” I thought “Wow, it’s not even my birthday..what’s up with that?” Then I opened the bag and saw the words “Power Air-Fryer XL.” My first thought was, “Oh great, where the hell am I going to put that big ass thing?” Then he said the magic words, and all was forgiven. He said, “food blog.” “Just think of all the recipes you can put on your food blog, using the air-fryer.” Surprisingly, I use the air-fryer more than I ever thought I would, so kudos to my hubby:)

Serves Two

Jalapeño Popper Chicken serves two people but can easily be doubled or even tripled depending on how many people you’re having for dinner. My hubby is a chili head and I am not. If you encounter this same situation, where some like it hot and others not, I’ve got the perfect solution.

Perfect Solution

Here is the perfect solution for a household divided by chili heads and non-chili heads. In a medium bowl, whip the cream cheese. Stir in the fried bacon and shredded cheese. Divide this mixture in half. Too one half of the cream cheese mixture, add one tablespoon diced jalapeños. Too the remaining half of cream cheese, stir in the remaining 3 tablespoons diced jalapeños. Stuff one chicken breast with the spicier cream cheese mixture and stuff the other chicken breast with the not-so-spicy cream cheese mixture. With this simple solution, everyone will be happy.

Ingredients

  • 4 slices bacon, cooked and crumbled
  • 1 slice uncooked bacon*** cut in half
  • 3 ounces cream cheese, softened
  • 1/4 cup pickled jalapeño, diced
  • 1/2 cup shredded smoked Gouda cheese*, divided
  • 2 boneless, skinless chicken breasts

Equipment

  • Air Fryer

Instructions
 

  • In a medium bowl, whip cream cheese. Stir in crumbled bacon, diced jalapeños, and shredded cheese.
  • Cut a slit lengthwise into the top of each chicken breast making a “pocket” be careful not to cut all the way through.
  • Stuff the cream cheese mixture into each pocket. Place 1/2 slice bacon on top of the cheese.
  • Place chicken in air fryer basket and set Air Fry to 350. Air-fry for 20 minutes.**

Notes

*Substitute sharp cheddar or mozzarella cheese.
**Cooking time can vary between Air Fryer brands and thickness of the chicken breast. Cook a few minutes longer if necessary.
***Placing the uncooked bacon on top of stuffed chicken will keep it moist.
