Impossible Coconut Pie

Impossible Pies are made with Bisquick. Are they really impossible? Nope, not at all. There is nothing impossible about mixing up several ingredients, pouring them into a 9-inch pie plate,  placing the filled pie plate in the oven for 50 minutes and having the layers magically settle into pie formation, crust on the bottom and filling on the top. Doesn’t sound Impossible at all. Impossible Coconut Pie is one of our favorite impossible pie recipes.

Mystery Pie

Impossible Pie a.k.a. Mystery Pie took many parts of the country by storm in the 1970’s and 1980’s. Origins of the Impossible Coconut Pie are a mystery, some think the recipe originated in the south where coconut custard pie is popular. Others think General Mills, the makers of Bisquick,
“discovered” the mystery pie as a way to promote their product.

Bisquick

This is the first time I have ever made an Impossible Pie. My sister Barb, on the other hand, is the Queen of Impossible Pies and Bisquick in general. Barb thought that Impossible Pies and Bisquick were the next best thing to sliced white bread. I, on the other hand have just recently re-discovered Bisquick and all of it’s many uses.

Bisquick can be used to make pancakes, waffles, biscuits, coffee cakes and many different kinds of Impossible Pies…..from sweet to savory, the possibilities are endless. Get in your car and head to the nearest grocery store and pick up a box, you’ll be so glad you did!

Impossible Coconut Pie

Delicious Pie!

Ingredients

  • 1 cup coconut
  • 3/4 cup sugar
  • 1/2 cup Original Bisquick Baking Mix
  • 1/4 cup butter, softened
  • 2 cups canned coconut milk
  • 1 1/2 teaspoons vanilla extract
  • 4 eggs
  • whipped cream. optional

Instructions
 

  • Heat oven to 350°
  • Grease 9 inch pie plate with non-stick cooking spray.
  • In medium bowl, stir all ingredients together until blended, pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean.
  • Cool on wire rack. Serve with whipped cream, optional
  • Cover and refrigerate any left-overs.
