Want to try something different for breakfast? Maybe something out of the ordinary for dinner tonight? Then think about making this recipe for Huevos Rancheros a try. Top servings of huevos casserole with mild or spicy salsa and add a kick to your breakfast or dinner. Add some sliced fresh tomatoes and ripe avocado wedges and you’ll have a meal that will have everyone at the table shouting Olé.
To make this an even more euthentic Spanish style breakfast, serve fried potatoes and refried beans along with the sliced tomatoes and avocado wedges.

The list of ingredients for this casserole is a simple one but they merge together beautifully. Queso quesadilla cheese, chorizo sausage and canned chopped green chilies is just a start. Corn tortillas are sliced into strips and a few are left whole. Cheese, sausage, chilies and tortilla strips are layered in a baking dish. A mixture of beaten eggs, milk and spices are combined together and poured over all. This is then baked and served. Delicious!


Huevo
Huevo is Spanish for “egg.” Huevo duros are “hard-boiled eggs,” huevos pasados por agua are “soft-boiled eggs,” huevos escalfados are “poached eggs,” huevos fritos are “fried eggs,” and huevos revueltos are “scrambled eggs.” Huevos Rancheros is Spanish for “rancher’s eggs,” although the more common translation is “country-style” eggs. Huevos rancheros consists of fried corn tortillas, topped with fried eggs and then a layer of salsa.
Serve For Breakfast or Dunner
Huevos Rancheros is basically a term used for eggs and tortillas. A southwestern favorite that is popular for brunch or supper. Egg dishes such as Huevos Rancheros are served in Mexico at “almuezo,” a second breakfast served to ranch hands and farm workers after their early morning chores. There really isn’t a set recipe for Huevos Rancheros, just many variations with different accompaniments.
The basic version of this dish consists of fried corn tortillas, scrambled or fried eggs with a tomato-chili sauce. Refried beans, (frijoles refritos), slices of avocado, fried potatoes and chili peppers are common accompaniments. Scrambles eggs can be used instead of the fried eggs.


Huevos Rancheros Casserole
Ingredients
- 5 flour tortillas, large burrito size
- 1 1/2 cups shredded queso quesadilla cheese
- 1/2 pound smoked cooked chorizo sausage or cooked ground beef
- 1 4 oz can chopped green chilies
- 6 eggs
- 1/2 cup milk
- 2 teaspoons dried parsley
- 1/2 teaspoon taco seasoning
- 1/8 teaspoon cayenne pepper
- salt and pepper, to taste
Instructions
- Spray 8-inch square baking dish with non-stick cooking spray. Place 2 to 3 of the tortillas in bottom of sprayed baking dish, overlapping if necessary, about 1/2 to 1 inch up sides. Cut remaining tortilla in half; cut into 1/2 inch wide strips. Sprinkle 1/2 cup of the cheese over tortillas in baking dish. Top with chorizo or ground beef, green chilies and 1/2 cup cheese. Arrange tortilla strips over cheese.
- In medium bowl, combine eggs, milk, parsley, taco seasoning, cayenne pepper, salt and pepper. Beat well. Pour over mixture in baking dish. Sprinkle with remaining 1/2 cup cheese; press lightly into egg mixture. Cover with foil. Refrigerate at least 8 hours or overnight.
- Heat oven to 350º Bake covered for 30 minutes. Uncover; bake 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
- Cut in squares and serve with salsa and sliced avocado.

Wow, you've brought back some memories. My grandpa was crazy about huevos rancheros for the longest time. I think that jag was the first time I was introduced to the Spanish language and I thought the word huevos was just the greatest thing! Love this as a casserole. Thank you for sharing, Lynn.

Lynn, I have never used Green Chilies before. This does look yummy.
Hi Cindy~ You have never used diced green chilies before? I put a 4 oz can in so many dishes! They are on the spicy side so they do add some heat to a dish:) Pick up a can and give them a try. I used to add a tablespoon or so but now I add the whole can:)
