Easy Tortellini Soup

Easy Tortellini Soup is just that, Easy. Not only is it unbelievably easy to make, this soup is ready in under an hour. Making this soup perfect to make for dinner on those busy week-day nights. This soup is made with convenient ingredients. Just in case you need a fast, easy and delicious dinner option. Half the battle of making a fast dinner during a busy work week, is knowing what your going to make. Figuring out what your going to make, having the ingredients on hand, like a package of frozen tortellini, is one step in the right direction.

Serve With

Sprinkle bowls of this soup with Parmesan cheese before serving. You can also serve bowls of soup with garlic bread or garlic-cheese croutons for an extra treat. If you have a few extra minutes to spare, bowls of this soup would be fantastic served with Mozzarella and Provolone Panini.  After all, sandwiches are to soup like cookies are too milk, they’re meant to be dunked.

Ingredients

  • 1 pound ground beef
  • 4 cups water
  • 1 can (28 oz) diced tomatoes
  • 1 can (10 1/2 oz) condensed French onion soup, undiluted
  • 1 package (9 oz) frozen cut green beans
  • 1 package (9 oz) frozen cheese tortellini
  • 1 medium zucchini, chopped
  • 1 teaspoon dried basil
  • 1 packet (1.48 oz) McCormick Slow Cookers Chicken Tortilla Soup Seasoning Mix, optional

Instructions
 

  • In a large saucepan or Dutch oven, cook beef over medium heat until no longer pink; drain. Add the remaining ingredients; bring to a boil. Cook, uncovered, for 5 minutes. Reduce heat and simmer for 10 to 15 minutes.

Notes

Before serving, sprinkle bowls of soup with Parmesan cheese and serve soup with garlic bread or garlic cheese croutons.
