Cherry Pecan Snowball Cookies

Did someone say Cookies! ♪ Tis’ the season to bake some cookies ♪♫ Fa la la la la, la la la la ♫. As most of you know, we love our cookies here on Turnips 2 Tangerines and every December we do cookies. Last year, we made popular Christmas cookies from around the world. This year it’s all about cookie facts or cookies in general. Cherry Pecan Snowball Cookies are sure to become a new Christmas time favorite cookie!

Snowball Cookies

Cherry Pecan Snowball Cookies go by many different names. Pecan fingers, pecan crescents, Mexican wedding cookies, Russian Tea Cakes just to name a few! I grew up eating these light, buttery cookies at my grandmas house. Every Christmas she’d make a batch of these powdered sugar coated cookies we called, ‘pecan fingers.’ Now that my hubby can no longer eat nuts due to his diverticulitis, the addition of candied fruit adds flavor and texture without causing him problems.

What Is A Cookie?

A cookie can be any of various hand-held, flour-based sweet cakes. Cookies can be either crispy or soft. The word cookie comes from the Dutch koekje. My ancestry is part Dutch so this may explain my weakness for cookies. There are six basic cookie styles, any of which can range from tender-crisp to soft and delicate. The six types of cookies are all easy to make and are of course delicious to eat.

Types of Cookies

A Drop Cookie is made by dropping spoonfuls of dough onto a baking sheet. Bar Cookies are created when a batter or soft dough is spooned into a shallow pan, then baked, cooled and cut into bars. Hand-formed (or molded) Cookies are made by shaping dough by hand into small balls, logs, crescents and other shapes. Pressed Cookies are formed by pressing dough through a cookie press or pastry bag to form fancy shapes and designs.

Refrigerator or Ice-box Cookies are made by shaping the dough into a log, which is refrigerated until firm, then sliced and baked. The original ‘slice n’ bake’ cookie if you will. Rolled Cookies begin by using a rolling pin to roll the dough out flat; then cut into decorative shapes with cookie cutters. Other cookies, as the German Springerle, are formed by imprinting designs on the dough by rolling a special decoratively carved rolling pin over it.

Cherry Pecan Snowball Cookies are made with whole candied red cherries that I chopped fine. I made one batch with-out chopped pecans for my hubby and one batch with both candied cherries and pecans for me:) Now if you wanted to really get into the holiday spirit, add both chopped red and green candied cherries. Cookies, Biscuits or Galletas

Cookies have different names throughout the world. In England, cookies are called biscuits, in Spain they’re galletas, Germans call cookies keks, and in Italy they have biscotti. Cherry Pecan Snowball Cookies

Ingredients

  • 1 cup butter, soften
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla or almond extract
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped candied red cherries
  • 1/2 cup finely chopped pecans

Instructions
 

  • Cream together butter and sugar until light and fluffy. Add vanilla or almond extract. Beat well. Set aside. In a separate bowl, combine flour and salt. Blend into butter mixture. Stir in cherries and pecans. Chill for 2 hours.
  • Preheat oven to 350°. Shape dough into balls. Place on baking sheet lined with parchment paper or silicone mat. Bake for 12 to 15 minutes or until light golden brown. While cookies are still warm, roll in confectioners' sugar. Cool on wire racks.
