Bacon Wrapped Chevre Stuffed Chicken Breasts

This is one of our favorite ways to prepare chicken. Boneless, skinless, chicken breasts are stuffed with garlic and herb goat cheese, and then wrapped in bacon. What’s not to like! Did I mention you can make these tasty Bacon Wrapped Chevre Stuffed Chicken Breasts in a slow cooker? Even better. Chevre is basically a fancy word for goat cheese. Not a fan of goat cheese? Substitute garlic and herb Boursin cheese.

Bacon Wrapped Chèvre Stuffed Chicken Breasts are super delicious served alongside a bed of wild rice and your favorite steamed vegetable. Use your favorite barbecue sauce for dipping or make your favorite recipe for homemade barbecue sauce. We like to use Whiskey River BBQ Sauce from Red Robin.  For this recipe we used Mrs. Dash Original Seasoning Blend but feel free to use your favorite seasoning blend or make your own.

What is Chèvre

Chèvre is French for “goat.” Chèvre is a pure white goats-milk cheese with a distinctively tart flavor. They can range in texture from moist and creamy to dry and semi-firm. Chèvre are often coated in edible ash or leaves, herbs, citrus zest, or black pepper. For this recipe we used a chèvre from Montchevre. While some people aren’t fond of this tangy cheese, I’ve grown very fond of it. My favorites are fig and olive and blueberry vanilla.

Ingredients

  • 4 boneless, skinless chicken breast
  • 4 ounces fresh garlic and herb chevre cheese log
  • 12 slices bacon
  • 2 teaspoons any seasoning blend of your choice
  • drizzle of honey
  • favorite barbecue sauce

Instructions
 

  • Place goat cheese in a small bowl, soften with a fork. Set aside.
  • Pound chicken breast to flatten,
  • spread goat cheese over half of the chicken breasts,
  • fold over, repeat with remaining cheese and chicken breasts.
  • Season with seasoning blend.
  • Lay 3 slices of bacon on counter top,
  • lay chicken breast on bacon slices, fold the bacon over the chicken.
  • Place wrapped chicken breast, seam side down in crock-pot.
  • Drizzle with honey.
  • Cover, turn to low. Cook on low 4 to 5 hours.
