Apple Grape Chicken Salad

Hey Everyone! Welcome back to Turnips 2 Tangerines. Today’s recipe is made with leftover boneless, skinless chicken breasts that I made in the air fryer. After a few scorching days here in Wisconsin, and no air conditioning in my kitchen, my air fryer came to the rescue once again. Even though an air fryer gives off heat, it’s not the same as having your oven on at 400 degrees for an extended period of theme. Plus cooking times are much shorter in an air fryer which reduces the heat also. Apple Grape Chicken Salad is super delicious.

Chicken Salad Ingredients

When making this chicken salad I used what I had in the refrigerator, which is: diced red onion, diced celery, sliced green grapes, chopped apple, snipped green onion tops and a small amount of Hellman’s mayo. I would have added a few extra ingredients if I had them on hand such as: dried cranberries or cherries, nuts like cashews would be great. Another thing, you only need one or two large spoonfuls of mayonnaise. If you aren’t a fan of Hellman’s mayo, you could substitute miracle whip or a salad dressing such as Caesar’s.

Serve With..

Apple Grape Chicken Salad can certainly be eaten alone, which is how I ate it or you can serve it this chicken salad in a number of ways. Serve scoops of apple grape chicken salad on top of salad greens and sprinkle the top with sliced almonds or cashews. Avocados or fresh tomatoes make great serving vessels. Another option is to serve apple grape chicken salad on a croissant, Hawaiian sweet rolls or serve with crackers as an appetizer.

Ingredients

  • 2-3 cups fully cooked, leftover chicken breasts, chopped
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup snipped green onion tops
  • 1 medium apple, chopped
  • 1/2 cup sliced green grapes
  • 2-4 tablespoons mayonnaise, or to taste

Instructions
 

  • In a large bowl, toss together all ingredients until combined. Refrigerate for about an hour. Serve.
