Fresh Tomato Radish Salad

This recipe is a sure fire way to use up the over abundance of fresh tomatoes growing in your garden. Fresh tomato radish salad is one of our favorite recipes using tomatoes. It’s fast, easy, affordable and delicious. The flavor of fresh tomatoes really shines through. Mix and match vegetables to suit your family’s likes and dislikes. The key to making this salad fantastic is slicing the vegetables paper-thin, and using fresh ripe tomatoes. Chop the tomatoes into bite-size pieces and seed them if you’d like. This step is optional based on your personal preference.

This recipe calls for using radishes. We understand that not everyone likes radishes but that’s ok, we’re here to help:) Substitute fresh cucumbers, zucchini, summer squash, Brussels sprouts, heck throw in some fresh corn-off-the-cob. Use whatever veggies your family likes. It’s a great way to get your family to eat their veggies. Like I stated above, the key is to slice whichever vegetables you choose to use, paper-thin.

A mandolin (obviously not the kind you play) works perfectly for slicing vegetables or even fruits for that matter, into super thin slices. Believe it or not, I actually won my mandolin a few years ago, through a contest I had entered. I never win anything so I was thrilled! I’ve been using that same mandolin ever since. Don’t have a mandolin? Consider purchasing one, you won’t regret it but use extreme caution when using a mandolin, they’re sharp!

Salad Dressing

Toss this simple salad with your favorite brand of blue cheese salad dressing. We like to use Marzetti Blue Cheese Dressing. Certainly you can make your own salad dressing but we like the flavor, creaminess and the nice large chunks of blue cheese found in Marzetti brand of blue cheese dressing. Don’t like blue cheese or blue cheese salad dressing? Ranch, Cucumber Ranch or a flavored Balsamic Vinaigrette such as a Raspberry Balsamic Vinaigrette would certainly work nicely in this recipe also.

Fresh Tomato Radish Salad

Ingredients

  • 4 large fresh, ripe tomatoes
  • 1 small sweet onion
  • 4 to 6 fresh radishes
  • 1/3 cup blue cheese salad dressing
  • 6 basil leaves, torn, optional
  • salt and pepper to taste

Instructions
 

  • Chop tomatoes into bite-size pieces. Remove seeds, optional. Place tomatoes in large bowl.
  • Thinly slice radishes and onion, add to tomatoes. Cover with plastic wrap and refrigerate for several hours.
  • Before serving drizzle with salad dressing and season with salt and pepper. Serve immediately.
