No Bake Tropical Cereal Chews

If you’re a fan of Scotcheroos   sometimes referred to as Special K bars, you are going to fall in love with these No Bake Tropical Cereal Chews. Made with two kinds of cereal, peanut butter, sugar, corn syrup and the ingredient that makes this classic treat special, Paradise Tropical Fruit.

Special K Bars or Scotcheroos

Scotcheroos are made with Rice Krispies cereal  whereas Special K bars are made with Special K cereal. Another than the difference in cereals, the recipe is the same. Sugar, corn starch and peanut butter are the ‘must have’ ingredients. (some recipes call for vanilla extract too) The cereals most often used are; Rice Krispies, Cornflakes, and Special K cereal. Whereas in this recipe, two different kinds of cereal is used. The frosting is semi-sweet or milk chocolate chips and the must have ingredient,  butterscotch chips. A simple recipe, that’s big on taste.

Too Sweet

For no other reason than I thought the bars would be too sweet, I didn’t top these no bake tropical cereal chews with the traditional melted chocolate chip and butterscotch chip frosting. I think I just heard a collective groan:) I know what you’re thinking?! Why didn’t I add the best part!!? Well, I’ll be totally honest here, I made a big mistake by not adding the chocolate butterscotch frosting. The cereal chews were delicious without the frosting but on the other hand, they would have been spectacular and not to sweet I might add, with the chocolate butterscotch frosting. Lesson learned:) Next time I’m going to frost half of the cereal chews with the chocolate butterscotch frosting and leave the other half ‘naked.’ That solves that:)

 

No Bake Tropical Cereal Chews

A delicious no bake Cereal treat made with Paradise Fruit. Similar to that classic Special K bars.

Ingredients

  • 4 cups cornflakes
  • 2 cups crisp rice cereal
  • 1 cup tropical dried fruit mix, chopped
  • 1/2 cup granulated sugar
  • 3/4 cup corn syrup
  • 1 cup peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions
 

  • In a large buttered bowl, combine cereals and chopped dried fruit; set aside.
  • In 2-quart saucepan, combine sugar and corn syrup. Cook and stir over medium heat until sugar is completely dissolved, 5 minutes.
  • Remove from heat and stir in peanut butter. Pour over cereal mixture and mix well to evenly cost.
  • Spoon mixture into a 13 x 9-inch glass baking dish or pan. Press down firmly.
  • Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm.
