Celery or as my hubby calls it ‘salary’, was used exclusively as a medicinal herb before the 16th century. Now it’s one of the most popular vegetables in the Western world. Celery is available year-round. Choose firm bunches that are tightly formed; the leaves should be green and crisp. Store celery in a plastic bag in the refrigerator up to two weeks. Leave the ribs attached to the stalk until ready to use. Celery should be well washed and trimmed of leaves. Reserve the leaves for soups, stews and casseroles.
Celery is one of the most overlooked vegetable in my humble opinion. It’s usually used as a base ingredient in flavoring dishes and is often combined with chopped onions and carrots (sometimes green peppers) called; mirepoix [mihr-PWAH]. Mirepoix is a mixture of diced carrots, onions, celery and herbs sauteed in butter. Sometimes ham or bacon is added. Mirepoix is used to season sauces, soups and stews, as well as for a bed to braise meat or fish.

How to Buy and Store Celery?
Of course, it is best to buy fresh celery and storing it the right way as well. There are certain things to take note as you buy and store celery.
Once buying celery, look for firm and tight ones with leaves and stalks which look fresh. And make sure that you wash it well and pat them dry. Celery also lasts for a number of weeks, but it is recommended that you consume it within two weeks.How long does celery last?
Regarding storage, store celery in the fridge and leave the stalks attached to the base up until you need to use them. If you don’t want to use it right away, you can freeze it. Rinse and chop the raw celery and then freeze on baking sheets for a few hours prior to transferring to plastic bags.
Celery can be kept in the freezer for a few month. Blanched diced celery should be drained thoroughly, and then you can freeze it for almost half a year.

You can use celery in fish, meat or vegetable stock. Celery can withstand long hours of cooking and it doesn’t add any color to your stock. Simply use the main stalks for flavor by cutting them into large chunks, and the thin leafy ends should be the base to your bouquet garni. Bouquet garni are herbs that are bound together and adds additional flavor to sauces and stocks.
Celery and Fennel Salad
A fast and easy delicious salad.
- 1 large A large fennel bulb
- 6 stalks celery
- 3 to 4 tablespoons fruity extra virgin olive oil
- 2 tablespoons lemon juice
Cut the fennel bulbs, lengthwise and very thin. Then, cut the celery stalks into thin matchsticks. After that, scatter the celery and the fennel on a large plate or on a platter, drizzle with the fruity extra virgin olive oil as well as the lemon juice and season with salt and pepper, to taste. If you have celery leaves or fennel fronds, scatter them over the salad.
Waldorf Slaw Salad
Celery is considered as the main component in this salad. This slaw salad offers a fresh spin on the dish. It keeps in the fridge for about three days, making it perfect to pack for your lunch, along with a cold cut sandwich, top a baked potato or simply serve this salad on a buffet.
A delicious twist on the traditional Waldorf Salad
- 1 small cabbage, shredded
- 4 stalks celery, sliced
- 2 peeled and diced green apples
- 1/2 cup halved grapes
- 6 tablespoons light mayonnaise
- 1 tablespoon white wine vinegar
- 1/2 cup walnuts, roughly chopped
Combine the grapes, apples, celery and the cabbage in a large bowl. Then, mix the mayo with vinegar and season with salt and pepper, to taste. Stir into the vegetables until well-coated. Sprinkle on the walnuts and serve. This should last in the fridge for almost three days.
Italian Sausage and Pasta Pot
There are a number of sauces and soups that only need a celery stalk or two. Sweating celery, carrots, and onions and combine it with sausages, stock, beans and you have a delicious meal.
A delicious and hearty meal.
- 1 tablespoon olive oil
- 8 Italian sausages
- 16 ounces penne pasta, cooked until al dente'
- 2 cups hot chicken stock
- 2 thinly sliced carrots and 1 small onion sliced
- 3 stalks celery, sliced
- 1 Handful of chopped flat-leaf parsley
- 1 cup green beans, sliced in half
In a large skillet, heat the oil. Fry the sausages until browned. Pour in the hot chicken stock and simmer, covered for around 10 minutes.
Add the pasta to the pan, mix well, bring to boil. Stir in the onions and carrots, cook for five minutes.
Add the green beans and celery, cook for another five minutes. Simmer until the pasta and vegetables are tender, cook a few minutes more, if needed.
Finally, stir in the chopped parsley, season with salt and pepper. Serve with grated Parmesan cheese.
