Rotini Tomato Salad

uncooked rotini pasta
1/4 to 1/3 cup
1 (15 oz) can
diced tomatoes with garlic, basil and oregano
grated Parmesan cheese
- Make pasta; bring 6 quarts water to a rapid boil. Add 1 teaspoon of salt to water, if desired. Add pasta and stir, return to a rapid boil. Cook uncovered, stirring occasionally, 5-8 minutes or until al dentè. Drain well, place pasta in a large bowl.
- Heat oil in a medium skillet, add minced garlic, saute for 3 minutes. Stir in canned diced tomatoes, dried basil, balsamic vinegar, salt and pepper. Stir and cook until bubbly, add tomato mixture to pasta, toss to coat. Sprinkle with Parmesan cheese.
