Easy Peanut Butter Fudge

Easy Peanut Butter Fudge is just that, easy! Thank goodness for that because I’m on my way to the Old World Christmas Market held at the beautiful and elegant Osthoff Resort in Elkhart Lake WI. I’ll have just enough time to make a batch of peanut butter fudge before I make the drive to Oshkosh, to spend the weekend with my son Bob and his wife Kim. Off I go to Oshkosh with fudge in hand!

Past Old World Christmas Market

For the past four years we have gone to the Old World Christmas Market at the Osthoff Resort in Elkhart Lake WI. What is Fudge Exactly?

Fudge is a creamy, semi-soft candy most often made with sugar, butter, evaporated milk and various flavorings. The most popular fudge flavor is chocolate-walnut. Although, maple (made with maple syrup), butterscotch (made with brown sugar or dark corn syrup) and vanilla are also favorites. Fudge can be creamy and smooth or may contain nuts, chocolate chips, candied dried fruit and anything else you can think of.

Ingredients

  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 2 tablespoons butter
  • 1/8 teaspoon salt
  • 2 1/2 cups mini marshmallows
  • 2 cups milk chocolate chips
  • 1 cup regular peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped peanuts, optional

Instructions
 

  • Line 8-inch square baking pan with foil.
  • Combine sugar, evaporated milk, butter and salt in a medium heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
  • Stir in marshmallows, milk chocolate chips, peanut butter and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared pan.
  • Cool for 1 minute, top with chopped peanuts if using, pressing in slightly.
  • Chill in refrigerator for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
