Seafood Pasta Salad

This is by far our most requested recipe and for good reason. It’s packed full of good-for-you ingredients. It is by far, one of my favorites. Be sure to write this recipe down on some recipe cards because no matter where you bring this salad, you will be asked for the recipe. Seafood Pasta Salad is one of those recipes that once you start eating it, you just can’t stop.

The simple dressing for this dish is made up of mayo or salad dressing, zesty Italian dressing and Parmesan cheese.  Canned black-eyed peas, cork-screw pasta, imitation crabmeat, broccoli, green pepper, cherry tomato halves and green onions are combined with the dressing to make a fast, easy, affordable and delicious salad.

Crabmeat

This is the perfect summertime pasta salad and the perfect pasta salad to showcase imitation crabmeat. One thing you should keep in mind when purchasing imitation crabmeat, make sure to buy a brand that you are familiar with, have used before and/or have at least tasted before. Imitation crabmeat varies considerably, and not-so-good-tasting crabmeat can ruin your pasta salad.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup zesty Italian salad dressing
  • 2 tablespoons grated Parmesan cheese
  • 1 cup canned black-eyed peas, rinsed
  • 8 ounces corkscrew pasta, cooked, rinsed and drained
  • 8 ounces imitation crabmeat, chopped
  • 1 cup broccoli florets, partially cooked
  • 1/2 cup diced green pepper
  • 1/2 cup cherry tomatoes, sliced in half
  • 1/4 cup sliced green onions

Instructions
 

  • Combine mayonnaise, salad dressing and Parmesan cheese in a large bowl. Blend well. Add black-eyed peas, pasta, imitation crabmeat, broccoli, green pepper, tomato and sliced green onions.
  • Toss gently to mix. Cover.
  • Refrigerate at least 2 hours before serving to blend flavors
