Pumpkin Chocolate Chip Sunflower Seed Bread

Pumpkin Chocolate Chip Sunflower Bread is delicious. Pumpkin and pumpkin recipes shouldn’t be reserved just for Thanksgiving. With canned pumpkin available year ’round, there is no reason not to enjoy pumpkin bread, pumpkin scones, pumpkin cookies, pumpkin everything, all year long. This recipe combines canned pumpkin, mini chocolate chips and sunflower seeds to make a delicious bread.

Pumpkin Pie Spice

I’ve also included a recipe for pumpkin pie spice. It’s fast and easy to make..very affordable too. Most home cooks have these basic spices on hand; nutmeg, cloves, ginger, allspice and cinnamon. Combined together and you have pumpkin pie spice.  Make as much as you need or only what you need for this recipe, either way,  it will taste so much more better.

Pumpkin Chocolate Chip Sunflower Seed Bread

 

Ingredients

  • 1 1/2 cups
    flour
  • 1 teaspoon
    baking powder
  • 1/2 teaspoon
    baking soda
  • 1/2 teaspoon
    salt
  • 1 cup
    canned solid packed pumpkin
  • 1/3 cup
    vegetable oil
  • 2 large
    eggs
  • 1 teaspoon
    pumpkin pie spice
  • 1 1/4 cups plus 1 teaspoon
    sugar
  • 1/2 cup
    mini chocolate chips
  • 1/4 cup
    unsalted sunflower seeds

Cooking Directions

  1. Preheat oven to 350º
  2. Lightly grease and flour a 9 x 5 inch loaf pan.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another medium bowl, whisk together pumpkin, oil, eggs, pumpkin pie spice and 1 1/4 cups sugar. Using a spatula fold flour mixture into pumpkin mixture. Stir just until combined. Gently fold in mini chocolate chips. Pour batter into prepared pan.
  5. Sprinkle top of bread with sunflower seeds.
  6. Sprinkle 1 teaspoon sugar over sunflower seeds.
  7. Bake at 350 degrees for 45 to 50 minutes or until a toothpick inserted in center comes out clean. Remove from oven.
  8. Cool in pan on wire rack for 5 minutes.
  9. Remove bread from pan.
  10. Cool bread completely on wire rack.

Pumpkin Pie Spice

 

Ingredients

  • 1/8 teaspoon
    ground nutmeg
  • 1/8 teaspoon
    ground cloves
  • 1/8 teaspoon
    ground ginger
  • 1/8 teaspoon
    ground allspice
  • 1/4 teaspoon
    ground cinnamon

Cooking Directions

  1. Mix all spices together.
  2. Store mixture in an air-tight container.
