Creative Cranberry Granola Cookies

One of my favorite things to do as a food blogger is to sample new to me products. Recently Golden Girl Granola I purchased Golden Girl Creative Cranberry Granola, made with cranberries, coconut and almonds. The minute I took a bite of Creative Cranberry Granola, I knew I was going to make cookies! If you can’t find Golden Girl Granola in your area, no problem! You can order Golden Girl Granola online.

Creative Cranberry Granola Cookies are made with all of my favorite, granola, dried cranberries, coconut, nuts, old-fashion oatmeal and lemon or white chocolate chips. The cookies are then baked until golden brown. Cranberry granola cookies have a slight crispy, crunch on the outside and a soft, chewy middle, typical of most cookies made with oatmeal. As a substitute your favorite cranberry granola for the Golden Girl if necessary.

Granola

Substitute your favorite brand of granola if you would rather not order granola online. Any brand will work as long as it is similar to Golden Girl Granola. Make sure it has dried cranberries, coconut, and almonds for a taste that will be similar to the recipe below. Cranberry granola cookies are super outstanding, no matter what brand of granola you use. Just make them!!

Creative Cranberry Granola Cookies

Ingredients

  • 1 cup 2 sticks butter, softened
  • 1 cup firmly packed light brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 1/4 cups Cranberry Granola
  • 1 1/2 cups old-fashioned oats
  • 1 cup lemon flavored chips or white chocolate chips

Instructions
 

  • Heat oven to 350º
  • Beat together butter and sugars until creamy. Add eggs and vanilla extract. Beat well.
  • Combine flour, baking soda, cinnamon and salt. Add to creamed mixture. Mix well.
  • Stir in granola, oatmeal and chips.
  • Drop by a rounded tablespoon onto an un-greased baking sheet.
  • Bake 10 to 12 minutes or until golden brown.
  • Cool cookies on a wire rack.
