Mini Lemon Flower Tarts

I saw these cute tarts on pinterest about a month ago and they are so darn cute, I just had to make them. With only three ingredients, you can’t go wrong. If lemon curd isn’t for you, fill the cups with pudding, pie filling, or even a cream cheese filling. You can find the original recipe here: Inspiredreamer.  We garnished these cute and delicious tarts with candied lemon peel, lemon chips and whipped cream. Mini Lemon Flower Tarts would be super fun and delicious to serve at a bridal shower or for mom on Mother’s Day.

Few Tips:

Keep a close eye on flowers tarts while baking, keeping the oven door slightly ajar, if necessary. Check after 5 minutes. Some flowers will brown faster than others, remove those to wire rack to cool, while the rest are baking, bake remaining flowers 2 to 3 minutes longer or until golden brown. Let tarts cool completely before filling and before topping tarts with powdered sugar, whipped cream and any other garnishes. Another garnish option is to use edible flowers such as violets or rose petals. To add a whimsical touch, make sugared rose petals or violets.

Change it Up

Lemon isn’t your thing? Substitute cherry pie filling or any pie filling you prefer. You can also substitute fresh fruit such as fresh blackberries, blueberries or raspberries. My hubby likes his flower tarts with chocolate pudding and pie filling. Personally, My favorite is refrigerated, ready-to-eat cream cheese filling.

The perfect little dessert.

Ingredients
  • 2 packages refrigerated pie crusts, thawed
  • 1 can lemon pie filling OR 1 jar lemon curd
  • 1 to 2 tablespoons powdered sugar, for dusting
  • whipped cream, lemon flavored chips, candied lemon peel, garnish
Directions
  1. On floured work space unroll pie crusts.
  2. With a floured rolling pin, roll out each pie crust dough.
  3. Cut out as many flowers as possible.
  4. Re-roll scrapes and cut more flowers, if needed.
  5. Cut out 24 flower shapes.
  6. Center each flower over a mini muffin depression.
  7. Fold alternate petals inward, gently push the dough down into the bottom.
  8. Gently push the outer petals against the muffin pan sides.
  9. Then push the inner 3 petals against the sides and outer 3 petals.
  10. Making a flower petal design.
  11. Prick each bottom of shells with fork twice.
  12. Bake at 425 for 5 to 7 minutes.
  13. Carefully remove shells to wire rack to cool.
  14. Fill each shell with lemon curd or pie filling.
  15. When shells are completely cool, dust "petals" with powdered sugar.
  16. Top with whipped cream, candied lemon peel and/or lemon chips
