Home-Style Fried Corn

My Grandma made her recipe for fried corn with heavy cream but I prefer to make this recipe for home style fried corn with canned evaporated milk. Heavy cream or evaporated milk, anyway you make this fried corn recipe, it’s delicious. If you have never experienced the pleasure of eating fried corn, you need to put it on your menu. You may never eat corn any other way again!

As a Side or Main Dish

Home-style fried corn can be served as a side dish or as a main dish. Served fried corn over mashed potatoes, with a sprinkle of crispy bacon for a super delicious meal option. Home-style fried corn is best made with fresh corn-off-the-cob but frozen, store bought corn will also work. The flavor will be delicious but not as delicious when using fresh corn.

When in Season

When corn is in season in your area, (end of July, August and September in my area) buy a few extra dozen of fresh corn, cut the corn off the cob and freeze it in zip-lock freezer bags. Then when you want to make home-style fried corn, you’ll have fresh/frozen corn at your fingertips. I’ve been  doing this for years and corn frozen this way retains it’s fresh flavor. Home-Style Fried Corn

A delicious way to eat fresh corn.

Ingredients

  • 3 cups fresh off the cob corn
  • 4 strips bacon, chopped
  • 1 small onion, chopped
  • 1/2 cup sweet red pepper, chopped
  • 1 teaspoon flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon sugar
  • 1/2 cup canned evaporated milk or heavy cream
  • mashed potatoes, optional

Instructions
 

  • If using fresh ears of corn, cut kernels off the cob. Measure 3 cups.
  • In a 10-inch frying pan, cook bacon over medium heat until crisp. Remove bacon, reserve drippings. Drain the bacon on paper towels; set aside
  • Add the corn, onion and red pepper to reserved bacon drippings. Cook over medium heat; stirring constantly for 8 minutes or until corn is tender and lightly browned. Stir in the flour, salt, pepper and sugar. Add the milk. Cook, stirring constantly, until mixture starts to thicken.
  • Cook and stir for 2 minutes mores. Sprinkle with the bacon pieces.
  • Serve over mashed potatoes if desired. Makes 4 servings
