Fruit Salad with Cool Mint Dressing
This is a delicious and refreshing way to enjoy summer fruit. Refreshing on a warm summer evening. The Cool Mint Dressing needs to be made a head, at least 8 hours for the flavors to marry together but will keep in the refrigerator for 1 week. Fruit Salad with Cool Mint Dressing is a super salad to enjoy while sitting outside and gazing over the lake.
Make Cool Mint Dressing
Cool, refreshing and minty.
- 1/3 cup red wine vinegar
- 1/4 cup honey
- 1/4 cup olive oil or vegetable oil
- 8 sprigs fresh mint leaves, torn
- 1 teaspoon key lime juice
- 1 teaspoon poppy seeds
In a jar with a tight fitting lid, combine the vinegar, honey or brown sugar, oil, mint, lime juice and poppy seeds. Cover tightly and shake well, then refrigerate at least 8 hours. Discard mint leaves and shake the dressing well. Will keep for 1 week in the refrigerator.

- 1 to 2 tablespoons
fresh mint leaves, torn, for garish
- 1 to 2 teaspoons
you can add raspberries and blackberries if desired
- In a large bowl, combine the bananas and berries. Pour the cool mint dressing, over the fruit salad. Garnish with fresh torn mint leaves and poppy seeds.
