This Chicken-Apple-Beet Salad
has the tang of Granny Smith apples
balanced out by the milder flavor of antioxidant-rich beets,
while pecan halves and romaine lettuce add texture.
The chicken breast is a great source of lean protein in this salad.
orange ginger stir fry sauce/marinade (La Choy)
chopped romaine lettuce
2 (6 oz each) packages
refrigerated diced oven roasted chicken breast
granny smith apple, unpeeled and diced
1 (14 1/2 oz) can
julienne or sliced beets, drained
- Stir together stir fry sauce and juice in small bowl for dressing; set aside.
- Divide lettuce between 6 serving plates. Top evenly with remaining ingredients. Drizzle with dressing.
You could try adding goat cheese to this salad, too.
A slice of good French bread or a multigrain roll would accompany this dish well.
