Bacon Spinach Cheese and Potato Bake

This is a great, make ahead dish to serve for breakfast, lunch or dinner. Serve this dish with fresh fruit for a sensational breakfast any day of the week or for brunch on the weekend. Serve Bacon, Spinach, Cheese and Potato Bake with fresh fruit cups and glasses of orange juice or for an adults only brunch, glasses of Mimosa. Breakfast bakes or egg casseroles are great to serve when having overnight guests. Easy and so convenient.

Bacon, spinach, cheese and potato bake is loaded with crispy bacon, frozen O’Brien hash brown potatoes, sharp cheddar cheese, frozen chopped spinach, eggs, milk, and garlic herb seasoning blend. This cast of characters is blended together and then baked. What comes out of the oven is a delicious, cheesy, smokey. egg bake that’s dotted with potatoes and spinach.Delicious for breakfast, brunch, lunch and even dinner.

O’Brien Potatoes

Potatoes O’Brien is a dish of pan-fried potatoes along with green and red bell peppers. The potatoes and the bell peppers are fried according to taste  and are served hot. The origin of the dish is disputed. Potatoes O’Brien has been claimed to originate in the early 1900’s from a Boston restaurant know as Jerome’s. Some say the dish is from a Manhattan restaurant known as Jack’s. Everyone agrees, O’Brien potatoes are sensational.

Frozen O’Brien Potatoes

In any recipe that calls for using frozen southern-style hash browns we like to substitute a package of O’Brien hash browns. You can find O’Brien potatoes in the frozen food section, located by the other frozen potatoes. Many recipes work best with cube style hash browns, while other recipes work better with shredded style has browns. We have been using ORE-IDA  hash browns for years. You can find them at any supermarket in your area.

Ingredients

  • 8 slices bacon, cut into 1/2 inch pieces
  • 4 cups frozen O'Brien potatoes with onions and peppers
  • 1 1/2 cups shredded sharp cheddar cheese
  • 8 ounces frozen chopped spinach, thawed and squeezed dry
  • 6 eggs
  • 3/4 cup milk
  • 1/2 teaspoon garlic and herb seasoning blend

Instructions
 

  • Spray 8-inch square dish or 2-quart glass baking dish with non-stick cooking spray.
  • Cook bacon in large skillet over medium-high heat until crisp. Remove bacon from skillet; drain on paper towels. In a large bowl, combine cooked bacon, potatoes and 1 cup of the cheese; toss to mix. Spread half of the potato mixture in sprayed baking dish, top with spinach and remaining potato mixture. In same large bowl, beat eggs, milk, and seasoning blend until well blended, pour over potato mixture, sprinkle with remaining 1/2 cup cheese.
  • Cover with foil. Refrigerate at least 8 hours or overnight. Heat oven to 350° Bake covered for 45 minutes, uncover baking dish. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean.
  • Let stand 10 minutes before serving.
