Eggnog Cherry Steel Cut Oatmeal

Eggnog Cherry Steel Cut Oatmeal is a delicious home-style oatmeal made in your slow cooker. Made with steel-cut oatmeal, commercial brand of eggnog, dried cherries and pumpkin pie spice. We have change the directions on all of our “overnight” oatmeal recipes. We feel that cooking oats in the crock pot for longer than 5 hours on low results in a burnt mess.

What Are Steel Cut Oats?

Scotch, Steel-Cut or Irish oatmeal are all names for grouts that have been cut into 2 or 3 pieces and not rolled. They take considerably longer to cook than rolled oats and have a decidedly chewy texture. Steel cut oats are best used in any recipe when making oats in the slow cooker. They keep they’re texture and can withstand the longer hours necessary for cooking.

What is Eggnog?

Eggnog is a homogeneous blend of milk or cream, beaten eggs, sugar, nutmeg and usually liquor. The liquor of choice is usually Rum, Brandy or Whiskey. Liquor-free Eggnog has long been served to convalescents and growing children as a tonic. Commercial Eggnog is alcohol-free and is available in cartons, usually in the dairy department by the milk or coffee creamer, beginning around mid-October. Canned Eggnog can be found year-round in some locations.

Now you can make your own pumpkin pie spice at home. Now that the holiday baking  marathon is in full swing, why not make your own spice blends. Try this easy recipe for pumpkin pie spice. There is nothing more frustrating then starting a recipe and realizing, when you’re half way through, that you don’t have a certain spice or spices!! Ladies and Gents, we’ve all been there, did that!!! This year get your baking off to a great start and have your “spices” ready, before you start.

Ingredients

  • 2 cups eggnog, (any store-bought brand)
  • 2 cups water
  • 1 1/2 cups steel cut oats
  • 1/4 teaspoon salt
  • 1/2 cup dried cherries, coarsely chopped
  • 1/2 teaspoon pumpkin pie spice

Instructions
 

  • Coat inside of 3 1/2 quart slow cooker with non-stick cooking spray. Add all ingredients to slow cooker. Stir; cover and cook on low for 4 hours or until oats are cooked and tender. Serve with additional eggnog and a sprinkling of pumpkin pie spice.
