Fruit Salad with Cool Mint Dressing

This is a delicious and refreshing way to enjoy summer fruit. Refreshing on a warm summer evening. The Cool Mint Dressing needs to be made a head, at least 8 hours for the flavors to marry together but will keep in the refrigerator for 1 week. Fruit Salad with Cool Mint Dressing is a super salad to enjoy while sitting outside and gazing over the lake.

 Make Cool Mint Dressing

Cool Mint Dressing needs to be made in advance. At least the night before serving. This step allows the flavors to blend together. If you grow your own mint then you’re in for a real treat for this dressing is best when made with fresh mint. I always have fresh mint growing on my kitchen windowsill. Mint is great to add as a garnish to fruit salads, desserts and tea. Head to your favorite garden center and pick up a small container of fresh mint. We like to use Bonnie Plants.

Ingredients

  • 1/3 cup red wine vinegar
  • 1/4 cup honey
  • 1/4 cup olive oil or vegetable oil
  • 8 sprigs fresh mint leaves, torn
  • 1 teaspoon key lime juice
  • 1 teaspoon poppy seeds

Instructions
 

  • In a jar with a tight fitting lid, combine the vinegar, honey or brown sugar, oil, mint, lime juice and poppy seeds. Cover tightly and shake well, then refrigerate at least 8 hours. Discard mint leaves and shake the dressing well. Will keep for 1 week in the refrigerator.

Fruit Salad

 

Ingredients

  • 2 medium
    firm bananas
  • 2 cups
    fresh blueberries
  • 2 cups
    sliced fresh strawberries
  • 1 to 2 tablespoons
    fresh mint leaves, torn, for garish
  • 1 to 2 teaspoons
    poppy seeds
  • whipped
    cream, optional
  • Note:
    you can add raspberries and blackberries if desired

Cooking Directions

  1. In a large bowl, combine the bananas and berries. Pour the cool mint dressing, over the fruit salad. Garnish with fresh torn mint leaves and poppy seeds.

Winter Fruit Salad is a super delicious salad great in the winter time or anything!
