Rotini Tomato Salad

Rotini Tomato Salad

  • 16 ounces uncooked rotini pasta
  • 1/4 to 1/3 cup olive oil
  • 3 minced garlic cloves
  • 1 (15 oz) can diced tomatoes with garlic, basil and oregano
  • 1 tablespoon dried basil
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup grated Parmesan cheese
Cooking Directions
  1. Make pasta; bring 6 quarts water to a rapid boil. Add 1 teaspoon of salt to water, if desired. Add pasta and stir, return to a rapid boil. Cook uncovered, stirring occasionally, 5-8 minutes or until al dentè. Drain well, place pasta in a large bowl.
  2. Heat oil in a medium skillet, add minced garlic, saute for 3 minutes. Stir in canned diced tomatoes, dried basil, balsamic vinegar, salt and pepper. Stir and cook until bubbly, add tomato mixture to pasta, toss to coat. Sprinkle with Parmesan cheese.
