Tasty Gluten and Dairy Free Banana Bread



We are huge fans of quick breads and
banana bread is one of our favorite.
There are so many different "add ins"
and let's face it, who doesn't have a bunch of
over-ripe bananas in their freezer:)


Tasty Gluten and Dairy Free Banana Bread

Ingredients
  • 1 1/3 cups brown rice flour
  • 1/3 cup tapioca starch
  • 1/3 cup sorghum flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon xatham gum
  • 1/2 cup dairy-free margarine
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 4 to 5 ripe bananas
  • 2 tablespoons chia seeds
Cooking Directions
  1. Preheat oven to 350ยบ Grease and flour 9 x 5 inch loaf pan.
  2. Mash bananas; set aside.
  3. In medium bowl, combine flours, baking soda, baking powder, salt and xatham gum, set aside.
  4. In a large bowl, cream together margarine and brown sugar. Mix in eggs, mashed bananas and chia seeds until well blended. Add flour mixture to banana mixture. Stir until just moistened. Pour batter into prepared pan.
  5. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.

  4. Banana bread is a personal favorite. This sounds great. We aren't gluten free, so I am unfamiliar with many of those ingredients, however my husband accidentally bought a bag of xatham gum not too long ago, so maybe this is my chance to finally give it a try! Great pick this month :)

    1. Hi Melissa~ We are relatively new to the gulten free ingredients, but when I asked questions at the health food store, they were more than willing to help...which was great!

  6. I think it's awesome when I see people find GOOD gluten/dairy free recipes of classic staples. I know when I did the elimination diet for my oldest a few years ago, it was so hard to find recipes that didn't taste like cardboard. Happy reveal day!
