Tasty Gluten and Dairy Free Banana Bread

We are huge fans of quick breads and
banana bread is one of our favorite.
There are so many different "add ins"
and let's face it, who doesn't have a bunch of
over-ripe bananas in their freezer:)

Tasty Gluten and Dairy Free Banana Bread

  • 1 1/3 cups brown rice flour
  • 1/3 cup tapioca starch
  • 1/3 cup sorghum flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon xatham gum
  • 1/2 cup dairy-free margarine
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 4 to 5 ripe bananas
  • 2 tablespoons chia seeds
Cooking Directions
  1. Preheat oven to 350ยบ Grease and flour 9 x 5 inch loaf pan.
  2. Mash bananas; set aside.
  3. In medium bowl, combine flours, baking soda, baking powder, salt and xatham gum, set aside.
  4. In a large bowl, cream together margarine and brown sugar. Mix in eggs, mashed bananas and chia seeds until well blended. Add flour mixture to banana mixture. Stir until just moistened. Pour batter into prepared pan.
  5. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
