Mini Bacon Cheese Quiche

with Mini Coffee Cake Muffins

Celebrate Mother’s Day by making Mom a delicious breakfast. Serve your mom breakfast in bed with these mini bacon and cheese quiche, mini coffee cake muffins, fresh orange wedges and a cup of your mom’s favorite coffee. Mom will love sleeping in and waking up to a delightful breakfast made by you. What a wonderful way to tell your mom how much you love her.

Blueberry Muffins

Whenever I make muffins of any kind, I immediately think of my Grandma and the time we made my Grandpa blueberry muffins. My Grandpa and I were sitting at the dinning room table eating our breakfast. My Grandpa ate one blueberry muffin, then another and another. I said, “Wow Grandpa, you must really like blueberry muffins, you ate three!”

My Grandpa said, “I do! But…he leaned in closer so only I could hear and said, “I thought they were a little chewy this time but don’t tell your Grandma….I don’t want to hurt her feelings and besides, you know how she gets is you say anything about her cooking!?!” I said, “Ok Grandpa, I won’t tell her.” I then pretended to zip-a-lip.

Sometime Later

When my Grandma was done clearing the table, she came into the T.V. room and said “Thanks Lynn for helping me clean up.” I looked at her like she had asked me a question I didn’t know the answer too…and I said…”Excuse Me?” She said again,”Thanks for helping me” and I said, “With what?” She said, “Throwing away the empty paper liners..” a slight pause “from the blueberry muffins”

I said, “What empty paper liners?” Now my grandma was beginning to sound annoyed as she said, “From the blueberry muffins!” Now it was my turn to start sounding a little annoyed as I said, ” Grandma, I didn’t throw away any empty paper liners.” “You didn’t?” She asked. I said, “No” We looked at each other. Then we both slowly looked at my Grandpa, sitting in his brown Lazyboy, with his feet up and his eyes closed, softly snoring.

Chewy Cupcakes

I looked back at my Grandma and said, “Grandpa did say your blueberry muffins were a little chewy this time Grandma,” “He told me not to say anything about it because he didn’t want to hurt your feelings.” We both started to laugh…and laugh! Grandma then shouted “Frank!”Startled my grandpa opened his eyes and said “What!?! I wasn’t sleeping.”

My Grandma said,”Frank, your not suppose to eat the paper!” My Grandpa sat up and asked “What paper?” “The paper liners on the bottom half of the blueberry muffins” Grandma said. “I wasn’t?” Grandpa asked. “No!” was her answer. “Oh well” Grandpa said…”They were still good, just a little chewy, like I said before.”  We all got a good laugh over that.

Ingredients

  • 3/4 cup diced cooked bacon
  • 1/2 cup shredded Swiss cheese
  • 3 eggs, beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1/2 cup biscuit/baking mix
  • 1/4 teaspoon ground mustard
  • 2 tablespoons grated Parmesan cheese

Equipment

  • mini muffin tin

Instructions
 

  • In a small bowl combine the bacon and Swiss cheese.
  • Divide bacon and cheese mixture among 12 to 18 well greased mini muffin cups.
  • In a 4 cup glass measuring cup with spout combine the remaining ingredients, just until blended.
  • Slowly pour over bacon and cheese mixture.
  • Bake at 375° for 20 to 25 minutes or
  • until a toothpick inserted near the center comes out clean.
  • Let stand 5 minutes before removing from pan.

Ingredients

  • 1/3 cup butter, softened
  • 1/4 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 3.4 oz package instant vanilla pudding mix
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 cup mini chocolate chips
  • 1/2 cup coconut
  • 1/3 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1/4 teaspoon ground cinnamon

Equipment

  • mini muffin tin

Instructions
 

  • Line 12 to 18 mini muffin cups with paper liners.
  • In a medium mixing bowl, cream butter and sugar. Beat in egg.
  • Combine flour, pudding mix, baking powder and salt.
  • Add to creamed mixture alternately with milk.
  • Beat until well blended. Stir in mini chocolate chips.
  • Fill paper-lined mini muffin cups two-thirds full.
  • Combine topping ingredients. Sprinkle over batter.
  • Bake at 375 for 20 to 25 minutes or
  • until a toothpick inserted near the center comes out clean.
  • Remove muffins from pan to wire rack to cool.
