Cream Filled Valentine Funfetti Cupcakes

Today I’m going to visit my grand-kids and I’ve decided to make my some cupcakes. After all, I certainly can’t go for a visit empty handed! This is the reason why I always have a boxed cake mix, a container of frosting and sprinkles in my house, sprinkles for any occasion. Cream Filled Valentine Funfetti Cupcakes are not only fast and easy, but delicious too.

Love Cupcakes

Boy, Do my grand-kids love Cupcakes!! When I open the door, they run and yell “It’s Grandma!!” And I say, “Hi, It’s me Grandma!” Then they yell, “What did you bring us Grandma!” And I say, “I’ve got a surprise for you!” I show them what I brought which of course is always cupcakes. Then among  lots of Ooh’s and Aah’s, I say,  “Sit down at the table and Grandma will give you a cupcake”

Cupcake Heaven

They run to the table…clapping and squealing “Ok Grandma!!” I pour them each something to drink, pass out the cupcakes and sit down at the table.
More Ooh’s and Aah’s..”Yummy, you make the best cupcakes Grandma!! Thank you Grandma” “Your Welcome” I love being a Grandma:) Today I’m bringing these Cream Filled Valentine Funfetti Cupcakes frosted and decorated with Valentine candies and sprinkles.

Cream Filled Cupcakes

These delicious cupcakes start with a packaged  “Valentine funfetti”cake mix and are then filled with a homemade cream filling. The cream filling is fast and super easy to whip up. The filling tastes very close to the cream filling in Hostess Ho Ho’s…and who doesn’t like a Ho Ho now and then. The cupcakes are then topped with a container of vanilla funfetti frosting and decorated with an assortment of sprinkles and candies.

Ingredients

  • 1 box Valentine Funfetti cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 24 cupcake liners
  • Cream Filling:
  • 1/2 cup milk
  • 2 tablespoons flour
  • 1/2 cup vegetable shortening
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 15 oz container funfetti vanilla frosting
  • cherry flavored ju ju hearts
  • red, white and pink Valentine m & m candies

Instructions
 

  • Preheat oven to 350° Place paper cupcake liners into 2 cupcake pans. Each pan should make 12 cupcakes.
  • Combine cake mix, water, oil and eggs in large bowl. Mix until moistened. Beat with mixer on medium speed for 2 minutes. Pour batter into paper liners with a large spoon, fill 1/2 full. Bake at 350° degrees, for 19 to 23 minutes.
  • Remove cupcakes from pan, cool completely on wire racks.
  • In a small saucepan, whisk flour into milk until there aren't any lumps. Heat milk and flour on medium low heat, stirring constantly until mixture thickens to a gravy like consistency. Spoon mixture from hot pan into a small bowl. Cover with saran wrap. Allow to cool to room temperature. In a mixing bowl, cream shortening and sugar about 5 minutes. Add cooled milk-flour mixture, beat until fluffy and sugar is dissolved completely, about 5 minutes (Be sure to beat until the grains of sugar are dissolved) ( If in doubt, whip some more) Add vanilla and powdered sugar. Beat well.
  • Once cupcakes are fully cooled, place filling into a frosting bag with a star tip (#18), press the tip down into the middle of each cupcake, give a good squeeze to the bag, enough to cause the top of the cupcake to rise, but not enough to cause it to crack. (No worries if it does crack, the frosting will cover it)
  • Frost cupcakes with funfetti frosting and top with hearts and candy
