Cinnamon Swirl Bread

Quick Bread

Quick breads are so called because they require no kneading. They also include baking soda, baking powder or eggs to leaven the bread. As the name, quick breads are quick to make. Quick breads are considered unleavened bread because they require no leavening agent. Grains, seeds, nuts, and mashed fruit are often added to the bread for flavor, texture and moisture.

Popular Quick Breads

The most popular of quick breads is of course, banana bread. The second most popular quick bread, in my humble culinary opinion, is pumpkin bread. From dates to sunflower seeds, anything and everything has been added to these two types of quick breads. Here at T2T we love us some quick breads! Cinnamon Swirl Bread

A delicious light and airy quick bread with a delicate cinnamon swirl running through it

Ingredients

  • 1 1/3 cups sugar
  • 2 teaspoons ground cinnamon
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 1/3 cup oil

Instructions
 

  • Grease and flour a 9 x 5 inch loaf pan. Mix 1/3 cup sugar and cinnamon; set aside.
  • In a large mixing bowl, combine flour, baking powder, salt and remaining sugar.
  • In a medium bowl, combine egg, milk and oil; add to flour mixture. Stir just until moistened.
  • Pour half the batter into prepared pan. Sprinkle with half the cinnamon mixture.
  • Repeat with remaining batter and cinnamon mixture. Draw a knife through batter to marble.
  • Bake at 350º for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
  • Cool in pan for 10 minutes. Remove from pan. Cool.
  • Wrap and store bread overnight before slicing.
