On the Menu Today~
Chicken-Apple-Beet Salad

This Chicken-Apple-Beet Salad
has the tang of Granny Smith apples
balanced out by the milder flavor of antioxidant-rich beets,
while pecan halves and romaine lettuce add texture.
The chicken breast is a great source of lean protein in this salad.

Chicken, Apple, Beet, Salad,

You could try adding goat cheese to this salad, too.
A slice of good French bread or a multigrain roll would accompany this dish well.
Salads are such an easy way to fit more vegetables into your diet and
spring is the perfect time to have salads.
