Slow Cooker Bananas Foster

This recipe is perfect for entertaining. You make this wonderful dessert in your slow-cooker… which gives you more time to spend visiting with your guests.  Slow Cooker Bananas Foster is a delicious and impressive dessert to serve anytime. Bananas, butter, brown sugar,  Malibu rum, pecans and coconut are combined in your slow cooker. Three hours later, dessert is ready. Spoon over pound cake and top with vanilla ice cream for a memorable dessert.

Recipe Tip:

This recipe calls for Malibu rum. You can certainly omit the rum altogether and substitute coconut extract. Watkins is the brand of extracts we most often use. But, if you like and often partake in cocktails featuring Malibu rum, then by all means buy a big bottle. Or you can do what I often do. When a recipe calls for a small amount of alcohol, purchase one of those tiny bottles. They come in every type/flavor/brand imaginable and usually cost under $2.00. The amount varies somewhat but most are at least equal to a shot/jigger. If you don’t want a bottle of liquor collecting dust on a shelf in your pantry, consider purchasing a tiny bottle or two instead.

Ingredients

  • 5 medium bananas
  • 1 cup packed brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup Malibu rum
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped pecans
  • 1/3 cup sweetened flaked coconut
  • Vanilla ice cream
  • Pound cake, sliced

Equipment

  • Crock-pot, Slow cooker

Instructions
 

  • Cut bananas in half lengthwise, then width-wise. Layer in the bottom of a 1-1/2 quart slow cooker. With a wire whisk, combine the packed brown sugar, melted butter, liqueur and vanilla extract. Pour over bananas in slow cooker. Cook on low for 2 hours.
  • Sprinkle chopped pecans and coconut over bananas in slow cooker. Cover and cook 1/2 hour longer or until heated through.
  • Serve over pound cake and top with ice cream
