Hummus with Veggie Dippers

Veggies

Game Day Recipe



Hummus is served in cherry tomato shells along with
assorted vegetable dippers~




Hummus with Veggie Dippers

Ingredients
  • 1/2 cup tahini (sesame paste)
  • 1/3 cup lemon juice
  • 2 (15 oz) cans chickpeas, rinsed and drained*
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground red pepper (cayenne)
  • cherry tomatoes, sliced in half
  • green onions, diced
Cooking Directions
  1. In a blender container or food processor bowl, combine tahini and lemon juice.
  2. Cover and blend for 2 minutes. Add chickpeas, oil, and garlic cloves. Cover and blend for 2 minutes. Add dill, curry powder, salt, and ground red pepper.
  3. Cover and blend until mixture is smooth, stopping and scraping sides as necessary. Cover and chill for up to 3 days. Stir hummus before serving.
  4. Fill cherry tomatoes with hummus and/or serve with assorted veggie dippers

*For a creamier hummus,
remove the skin/shells from the rinsed and drained chickpeas.
