Banana Bread Scones

Ingredients
  • 1 cup mashed ripe bananas
  • 1/2 cup nonfat vanilla or banana flavored yogurt
  • 4 tablespoons sugar
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 tablespoons butter, chilled and cubed
  • 1/2 cup mini chocolate chips
Cooking Directions
  1. Preheat oven to 400ยบ
  2. Combine the banana, yogurt and sugar in a small bowl and set aside.
  3. Combine the flour, baking powder, salt and cinnamon in a large mixing bowl. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center of the dry ingredients and then add the banana mixture. Stir just until combined. Turn dough out onto a floured surface. Sprinkle the surface with the mini chocolate chips and knead them into the dough using extra flour to keep the dough from sticking. Pat the dough into a 9 inch circle and cut into 8 wedges. Place wedges onto a baking sheet lined with parchment paper.
  4. Bake for 20 to 30 minutes or until golden brown and firm to the touch. 
  5. Cool scones on a wire rack.
