Amaretto Cheesecake

Amaretto Cheesecake

Amaretto Cheesecake has a  wonderful almond flavor.

Amaretto Cheesecake

  • 2 cups graham crackers, crushed
  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 2 tablespoons ground almonds
  • 4 (8 oz) packages cream cheese, room temperature
  • 1 1/2 cups sugar
  • 2 tablespoons amaretto liqueur, optional
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/8 teaspoon salt
  • 4 eggs, lightly beaten
  • 2 cups sour cream
  • 1/4 cup sugar
  • 1 teaspoon almond extract
  • 1/2 cup slivered almonds

  1. In a large bowl, combine the cracker crumbs, butter, sugar and ground almonds. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Beat in the amaretto, extracts and salt. Add eggs; beat on low speed just until combined. Pour into crust. Place on baking sheet.
  3. Bake at 325ยบ for 55 to 60 minutes or until center is almost set. Remove from oven. Let stand for 5 minutes.
  4. Combine sour cream, sugar and almond extract; spread over top of cheesecake. Bake 5 minutes longer. Remove from oven and sprinkle with silvered almonds. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
