Lentil Soup

Lentil Soup

I love lentils and use them often in soups, stews and as a side dish~ 
                              Give this yummy soup a try...you'll love it:)

Lentil Soup

  • 1 cup dried lentils, rinsed
  • 6 cups chicken broth
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 3 stalks celery, chopped
  • 2 tablespoons olive oil
  • 1 (14 1/2 oz) can diced tomatoes with green chilies, undrained
  • 1 cup shredded carrots
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • crushed red pepper flakes, optional
  • sour cream, optional
Cooking Directions
  1. In a large saucepan, bring lentils and chicken broth to a boil. Reduce heat, simmer for 30 minutes. Meanwhile in a skillet saute' onion, garlic, celery in oil until vegetables are tender. Add to saucepan, stir. Add tomatoes, carrots, thyme and marjoram, stir well.
  2. Cook for 30 minutes or until lentils are tender.
  3. Serve with a dollop of sour cream and sprinkle with crushed red pepper, if desired.
