Raspberry Chocolate Truffles

  • 6 ounces semi-sweet chocolate
  • 1 ounce unsweetened chocolate
  • 1/2 cup whipping cream
  • 2 tablespoons butter
  • 3/4 cup confectioners' sugar
  • 2 egg yolks
  • 2 tablespoons raspberry liqueur
  • minced coconut, cocoa powder, melted chocolate and/or minced nuts
Cooking Directions:
  1. Place chocolate, cream and butter in top of a double boiler. Stir over hot water to melt chocolate. Remove from heat. Cover chocolate surface with sugar, then egg yolks. Whisk until smooth. Return to heat to blend ingredients. Remove from heat. Add raspberry liqueur.
  2. Pour into a flat dish, refrigerate until manageable. Shape into small balls, roll balls into minced coconut, cocoa powder, melted chocolate or minced nuts.
  3. Store in the refrigerator.
Yield: 3-4 dozen
