Peanut Brittle

  • 1/2 cup (1 stick) plus 3 tablespoons butter
  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 2 cups raw peanuts
  • 2 heaping teaspoons baking soda
Cooking Directions
  1. In heavy saucepan, mix together and boil (1 stick) butter, sugar, syrup and water. Boil to hard ball stage, stirring constantly for 5 minutes. Add 3 tablespoons butter, vanilla extract and peanuts. Remove from heat and add baking soda, stir quickly and pour onto a buttered foil-lined jelly-roll pan. Let cool. Break apart.
  2. Store tightly covered.

Yield: 2 pounds
